Like you said Vin, too many to mention and depends on the mood.
Can't pick a favourite but...
Mihalis
By-Tor & The Snow Dog
I Remember You
Keep The Spirit Alive
The Mexican
Joey
In The Still Of The Night
Rat Bat Blue
No More Tears
are just a few honourable mentions in my opinion.

(Not sure where to post this.)

I've got too many to mention like most of us, but I'll start with one at random. My tastes run from A to Z, depending on the mood I'm in. I happened to hit this one in a search this morning, and it made me wonder what you's all like.

The fact that I'm pointing this one out doesn't define me in any sense, but I do think the solo, as brief as it is, fits the song perfectly. I'd recommend listening to the whole song to hear the context, but if you just wanna skip to the solo, at least start at 2:35. It's a simple and effective solo that anyone can play.

I like mine with sausage, green peppers, onions, and black olives. :yesway:

There is so much good music here it's like the who's who of guitar legends.

That said, my personal favorite guitar solo of all time is a song called "Junkie's Dream" by Blackfoot. Used to see this band live, at that time Charlie Hargrett did the solo with a goldtop Les Paul and 100 watt Marshall half stack. Beautiful turnarounds in this solo. - the good stuff begins at the one minute, 48 second mark (1:48 )

Nailed it with Gary Moore Shapes of Things! Solo starts at 2:02 and to me, the best part is the extended solo starting at 2:42. One of my favorites!

Otherwise, I think the entire UFO Strangers In The Night album is one big solo for Michael Schenker, with perhaps the best solo ever recorded (IMO), Rock Bottom.

SITN is the GOAT album for killer melodic hard rock guitar solos 🤘

Love me some shenker, also Glen Tipton, beyond the realms of death.
