If you're going to go in and fix this problem, you may as well hardwire it for 16 ohms while you're at it. Those switches are notorious for failing and they can take your amp head with them.
How would you do that? I've been meaning to ask.....do you know who makes a single input replacement plate?

I my case, I just bought a female 1/4-inch jack from Amazon and wired to it. I filled in the (now non-functioning) 8-ohm jack with rubber cement to make 100% sure I can never accidentally plug into it.

Cosmetically, it's the same as before until you get up close, and that side of the cab is to the wall anyway.

That's a good idea. Thank you.

Probably just choose 1 jack and wire all connections there. At least, that's what I am assuming. Then, as others have said, block off the unused port. You definitely would not want to plug into a port with nothing wired to it .... and then turn your amp on - for sure. Immediate Output transformer destruction.

yeah, but, there is a little more to wiring it up...

the easiest way is series parallel. In that, you wire the speakers in 2 sets. Each set is wires in parallel. Then, you wire the speakers in a series loop.

from the input jack, + to positive on the 1st pair. Then, you run from the - of the 1st pair, to the + of the 2nd pair. Then the - of the 2nd pair back to the - of the input jack.

bottom is the speaker jack...
